Quinoa Pancakes

INGREDIENTS
1 cup of Quinoa Flour
1 egg
200 ml of the milk of your choice
1 pizca de canela, opcional
Pinch of salt
1 teaspoon ot the sweetener of your choice
INSTRUCTIONS
In a food processor or blender, add the quinoa grains until obtaining a homogeneous flour. Or in such a case, quinoa flour can be used directly.
Mix the quinoa flour with the egg, the milk of your choice, cinnamon if you like, a pinch of salt and the sweetener of your choice. You can choose between agave, honey or even yacon juice. The latter works perfectly in case the consumer is diabetic.
Let the mixture rest for approximately 10 minutes. Once ready, heat the pan with a little oil in it, whichever you want. Add the mixture to the pan and cook for 5 minutes until bubbles form on top, then flip until browned in the bottom. This will indicate that the pancake is ready.
It can be served with the fruits of your choice, honey or cacao nibs. A smoothie will be perfect to eat them in the breakfast.
