Quinoa and Avocado Salad

INGREDIENTS

 

  • 2 cups of Quinoa
  • Vegetables of your choice
  • 4 tablespoon of lemon juice
  • 1 avocado 
  • 1 teaspoon of olive oil
  • 1 teaspoon of the aromatic herb of your choice
  • Pinch of salt
 
INSTRUCTIONS
 
A nutritious and delicious form, perfect for a vegetarian diet and very simple.

 

First, the quinoa should be cooked. Once ready, let it get cold and start with the other ingredients.

 

This salad is very versatile, add the vegetables of your choice. In this case, we use tomato, carrot and some black olives.

 

In a bowl, combine all the ingredients including the quinoa. To this preparation, add the tablespoons of lemon juice, salt and olive oil to taste. Stir well so that all the flavors are accentuated.
